Residents of Fluvanna County may soon have two more options for lunch and dinner around Lake Monticello.

Plans are underway for two Mexican restaurants, El Vaquero and Guadalajara, to add their menus to a growing list of businesses in the area.

“From the county’s perspective, we’re always excited to see new growth,” said Kim Booth, economic development coordinator. “Especially when it’s placed strategically to best serve the community.”

El Vaquero is an authentic Mexican restaurant based in Orange County. Construction is expected to begin on its second location in the Piedmont Village shopping center off of Rt. 600, where Lamb’s Action was previously located.

“We have a lot of customers coming down from Fluvanna,” co-owner Manuel Plasencia said. “They drive all the way here so we decided to look at the area. It’s a nice county.”
Plasencia is currently working on applying for the permits needed to open the restaurant. A building permit has already been issued and blueprints for remodeling the space have been submitted to the county.

“I wanted to get everything started,” he said. “By the time we are finished building, everything will be ready.”

Because the restaurant will be located in an existing structure, a site development plan was not required. Before it can open, however, a Certificate of Occupany must be received from the Building Inspections department.

The restaurant will renovate the inside of the structure, which will include additional walls and another bathroom for customers. Owners expect to open their doors by early summer.

As many as 10 new jobs will be created by the opening.

Another 25 new positions will come from a second restaurant looking to bring ethnic cuisine to the area.

With three locations throughout Charlottesville, Guadalajara hopes to open a new restaurant off of Rt. 53 near Turkeysag Trail, adjacent to the University of Virginia Credit Union.

“We saw a great opportunity to grow there,” said Manager Josue Salinas. “We can give residents more to chose from.”

The chain is currently in negotiations with several of its business partners. When an agreement is met, construction for a new building will begin.

“We are still working on the plans,” Salinas said.
A site development plan has not been submitted for the new location, according to Bryant Phillips, planner for the Department of Planning and Community Development.

The restaurant hopes to finalize its plans soon and open within the next year.
